  • 3 eggs
  • 2 c. white sugar
  • 1 tsp. vanilla
  • 1 c. oil
  • 2 c. zucchini, peeled and grated
  • 3 1/2 c. flour
  • 1/2 c. raisins
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 c. chopped nuts
  • 1 c. pineapple, crushed and drained
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon

Directions

    Beat eggs until fluffy.

    Add sugar, vanilla, oil, zucchini, flour, baking powder, salt and soda.

    Stir in pineapple and raisins.

    Add nuts and mix well.

    Bake in a tube pan or 2 well-greased and floured loaf pans at 350° for 1 hour or until done (ovens vary).
