- 3 eggs
- 2 c. sugar
- 2 tsp. vanilla
- 1 c. oil
- 2 c. peeled, ground, drained small, raw zucchini
- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 c. raisins
- 1 c. chopped nuts
- 1 c. crushed pineapple, drained
Directions

1Beat eggs fluffy; add sugar, vanilla, oil and zucchini and mix well.

2Add dry ingredients.

3Stir in rest.

4Bake in two greased loaf pans for one hour at 320° or two 8 x 2-inch square pans.

5I use a 13 x 9-inch pan, but time may not be the same.

6Cool and frost.
