Zucchini Pineapple Jam

- 6 c. seeded and peeled zucchini, shredded
- 6 c. sugar
- 1/2 c. lemon juice
- 1 (20 oz.) can crushed pineapple, undrained
- 1 (6 oz.) pkg. strawberry jello
Directions

1Mix zucchini and sugar.

2Bring to a boil.

3Boil for 6 minutes. Stir constantly.

4Add lemon juice and pineapple.

5Cook and stir for 8 minutes.

6Add jello.

7Stir for 1 minute.

8Remove from heat. Skim and fill jars or plastic containers.

9Cool before covering. Refrigerate up to 3 weeks.

10Yields 4 cups.
