- 1 small onion, sliced
- 2 Tbsp. oil
- 2 tomatoes, peeled and quartered
- 1/3 c. diced green pepper
- 1 clove garlic, crushed
- salt and pepper to taste
- grated Parmesan cheese
- chopped parsley
- 2 medium zucchini, cubed
Directions

1Saute onion in oil in a skillet until tender.

2Stir in zucchini, tomatoes, green pepper, garlic and seasonings; cover and cook over medium heat 10 to 12 minutes, or until vegetables are tender.

3Transfer to a serving dish and sprinkle with cheese and parsley.
