Zucchini Relish

  • 3 or 4 large zucchini, peeled and remove seeds
  • 2 1/2 c. cider vinegar
  • 2 Tbsp. mustard
  • 2 Tbsp. celery
  • 2 Tbsp. turmeric
  • 3 Tbsp. cornstarch
  • 1 tsp. black pepper
  • 4 c. onions
  • 2 red and green peppers
  • 5 Tbsp. salt

    Grind 10 cups of zucchini in meat grinder, along with onions, peppers and salt.

    Mix and let set overnight.

    Next day, drain in colander and rinse in cold water.

    Add vinegar, mustard, celery, turmeric, cornstarch and black pepper.

    Mix and cook 3 minutes (simmer).

    Stir as it sticks on easily.
