- 2 c. zucchini, cut in thick slices
- 1/4 c. oil
- 1/2 c. chopped canned tomatoes, drained
- 1 Tbsp chopped onion
- 1/4 tsp pepper
- 2 Tbsp grated parmesan cheese
- salt to taste
Directions

1Cook onions in oil until transparent, stir frequently.

2Add all other ingredients except cheese.

3Cover pot and cook over low heat, stir but carefully until zucchini pieces are transparent, but still firm, This might take 10 to 15 minutes.

4Can add a small amount of drained tomatoes liquid if vegetables are not very juicy.

5Put cooked zucchini in oven proof dish.

6Sprinkle with cheese and place under broiler until cheese get brown.

7Do not over cook zucchini, it should be firm and crisp.

8Makes 4 servings.
