Zucchini Spaghetti

  • 1 lb. zucchini, sliced thin
  • 1 onion, sliced thin
  • 2 Tbsp. Parkay light margarine
  • 1 small green pepper, chopped
  • 1 jar spaghetti sauce
  • 1/4 tsp. garlic powder
  • salt and pepper (just a sprinkle)
  • 1/4 c. Parmesan cheese

Directions

    Saute zucchini, onion and pepper in margarine until tender. Sprinkle with salt, pepper and garlic powder.

    Layer zucchini, onion and pepper mixture with spaghetti sauce in a 2-quart casserole dish.

    Top with Parmesan cheese.

    Bake in a 350° oven for 30 minutes or until casserole is bubbling around the edges.
