- 1 lb. zucchini, sliced thin
- 1 onion, sliced thin
- 2 Tbsp. Parkay light margarine
- 1 small green pepper, chopped
- 1 jar spaghetti sauce
- 1/4 tsp. garlic powder
- salt and pepper (just a sprinkle)
- 1/4 c. Parmesan cheese
Directions

1Saute zucchini, onion and pepper in margarine until tender. Sprinkle with salt, pepper and garlic powder.

2Layer zucchini, onion and pepper mixture with spaghetti sauce in a 2-quart casserole dish.

3Top with Parmesan cheese.

4Bake in a 350° oven for 30 minutes or until casserole is bubbling around the edges.
