Zucchini Torte

Ingredients

  • 6 to 7 c. diced zucchini
  • 1 1/2 c. chopped onion
  • 3 c. tomatoes or sauce
  • 2 1/2 c. bread crumbs
  • 1/4 c. grated cheese
  • 3 to 4 eggs, slightly beaten
  • dash of parsley, pepper, salt and garlic powder
  • shredded carrots and celery (optional)

Directions

    Peel and remove seed from zucchini and dice.

    Salt and let set 1 1/2 hours to drain.

    Saute onion in oil and add zucchini, salt, pepper, parsley and garlic powder.

    Cook 2 minutes or so, then add tomatoes or sauce and cook 2 minutes more.

    Remove from heat and add crumbs, cheese and slightly beaten eggs.

    Pour into casserole and sprinkle a little oil on top.

    Bake to light golden brown, uncovered, at 350° for 45 minutes to 1 hour.
