- 4 cups shredded zucchini
- 1 large egg, beaten
- 1/4 cup bread crumbs
- 1/8 cup grated Parmesan cheese
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon garlic powder

1Preheat the oven to 450 degrees F (230 degrees C). Line 2 baking sheets with parchment paper.

2Squeeze moisture out of the zucchini. Place in a bowl; add egg, bread crumbs, Parmesan cheese, pepper, salt, and garlic powder. Mix well.

3Place four 1/4-cup scoops of mixture onto each baking sheet and press into 5-inch circles.
