Zucchini Walnut Bread

- 1 c. walnuts
- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 3 1/2 c. all-purpose flour
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 3/4 tsp. baking powder
- 2 c. grated zucchini (not pared)
- 1 c. raisins
- 1 tsp. vanilla extract
Directions

1Chop walnuts.

2Beat eggs; gradually beat in sugar, then oil. Combine first mixture, alternating with zucchini.

3Stir in raisins, walnuts and vanilla extract.

4Turn into 2 greased and lightly floured loaf pans.

5Bake at 350° or until loaves test done, approximately 1 hour.

6(Bake on lowest rack in oven.)

7Let stand about 10 minutes, turn out onto wire racks to cool.

8If desired, loaves may be lightly frosted with confectioners sugar, butter and vanilla mixed to a spreading consistency with milk. Makes two loaves.

9Freezes well!
