  • 1 c. vegetable oil
  • 2 c. sugar
  • 2 c. zucchini, peeled and grated
  • 3 Tbsp. vanilla
  • 3 Tbsp. cinnamon
  • 3 c. flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 c. nuts
  • 3/4 tsp. nutmeg

Directions

    Mix together the first 4 ingredients. Sift and add the rest of the dry ingredients. Grease and flour two bread loaf pans. Divide the batter in the two pans and bake at 325° for 1 hour.
