- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon (optional)
- 2 c. sugar
- 1 1/4 c. oil
- 4 eggs
- 1 jar junior baby food carrots
- 1 c. coconut
- 1/2 c. chopped nuts
- 1 (8 1/2 oz.) crushed pineapple, drained
Directions

1Mix together the flour, baking powder, baking soda, salt, cinnamon, sugar, oil, eggs and baby food carrots.

2Add coconut, chopped nuts and pineapple.

3Put in two 9-inch pans or a 9 x 13-inch pan.

4Bake at 350° for 30 to 35 minutes.

5Frost as wanted or can leave it unfrosted.

6Bake in a Bundt pan.
