  • 1 onion, diced
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup shredded Cheddar
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup shredded Monterey Jack
  • 1/4 cup shredded Muenster
  • Salt and pepper
  • 5 eggs, separated

    Preheat oven to 350 degrees F.

    Saute onion in butter until translucent.

    Whisk in flour to form a roux.

    Gradually whisk in milk until thickened.

    Add cheeses and season.

    Remove from heat and beat in yolks.

    While egg yolks are cooling, beat whites to stiff peak.
