- 1 onion, diced
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 cup whole milk
- 1/2 cup shredded Cheddar
- 1/2 cup shredded Swiss cheese
- 1/4 cup shredded Monterey Jack
- 1/4 cup shredded Muenster
- Salt and pepper
- 5 eggs, separated
Directions

1Preheat oven to 350 degrees F.

2Saute onion in butter until translucent.

3Whisk in flour to form a roux.

4Gradually whisk in milk until thickened.

5Add cheeses and season.

6Remove from heat and beat in yolks.

7Allow to cool.

8While egg yolks are cooling, beat whites to stiff peak.

9Gently fold in whites to cheese mixture.

10Add to buttered 1 1/2-quart casserole dish and bake for 35 to 40 minutes.
