Ingredients

  • 15 oz. box raisin bran or plain bran cereal
  • 1 qt. buttermilk
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. salt
  • 4 eggs
  • 5 c. flour
  • 5 tsp. baking soda
  • blueberries or nuts (optional; add just before baking)

Directions

    Mix cereal, buttermilk, oil, sugar and eggs.

    Sift flour, salt and soda together.

    Stir into cereal mixture.

    Cover and refrigerate 6 hours before using.

    When ready, fill paper lined muffin tins 2/3 full.

    (Batter will keep for 6 weeks, covered, in refrigerator.)

    Bake at 375° for 15 minutes.
