Ingredients

  • 12 cup sour cream (you can use no-fat)
  • 12 cup buttermilk
  • 12 cup feta cheese, crumbled (2oz)
  • 1 teaspoon sugar
  • 14 teaspoon dill
  • 12 teaspoon basil
  • 18 teaspoon pepper
  • 1 (16 ounce) package spinach tortellini (estimated package size)
  • 6 cups spinach, torn (or use romaine)
  • 8 ounces mushrooms, sliced
  • 2 roma tomatoes, chopped
  • 4 green onions, chopped
  • 2 12 ounces Canadian bacon, cooked & cut in small pieces

    DRESSING:

    Process all ingredients together and chill.

    SALAD:.

    Cook tortellini as per package directions (I prefer on the al dente side).

    Rinse in cold water.

    In a 3 quart rectangular dish, layer the spinach (romaine), tortellini, mushrooms, tomatoes and green onions.

    Pour dressing over and sprinkle with the bacon.

    Cover and chill for 2 hours.
