- 3 corn tortillas, cut in 2-inch strips
- 3 Tbsp. butter or margarine
- 1/2 c. diced onion
- 1 can stewed tomatoes
- 1 c. diced ham or turkey
- 1/2 c. green pepper, diced
- 6 eggs, beaten
- 3/4 c. shredded Monterey Jack cheese
Directions

1In large skillet, cook tortillas in butter until golden. Remove and set aside.

2Add onion; cook until tender.

3Drain tomatoes, reserving liquid.

4Add liquid to skillet over high heat and cover; stir frequently.

5Stir in tomatoes, meat and pepper; heat through.

6Reduce heat.

7Add tortillas and eggs.

8Cover and cook until eggs are set.

9Sprinkle with cheese; cover and cook 1 minute until cheese melts.
