Acorn Squash Salsa

Ingredients

  • 1 whole Acorn Squash
  • 1/2 Tablespoons Olive Oil
  • 1 teaspoon Minced Garlic
  • 2 whole Roma Tomatoes
  • 1/2 whole Red Onion
  • 1/2 whole Jalapeno, Stem And Seeds Removed
  • 1 bunch Cilantro
  • Salt To Taste

Directions

    Cut the squash in half from top to bottom.

    Scoop out the insides of the squash (save your seeds and you can toast them).

    Peel the squash and dice it.
  4. 4
    Toss it into a saute pan along with the olive oil and garlic.

    Saute your squash on a medium-high heat for approximately 10 minutes or until it is tender.

    Set aside to cool.

    Dice or chop all of the remaining ingredients and toss into a medium-sized bowl.

    Add the cooled squash.

    Add salt to taste.

    Mix well!
