- 1 whole Acorn Squash
- 1/2 Tablespoons Olive Oil
- 1 teaspoon Minced Garlic
- 2 whole Roma Tomatoes
- 1/2 whole Red Onion
- 1/2 whole Jalapeno, Stem And Seeds Removed
- 1 bunch Cilantro
- Salt To Taste
Directions

1Cut the squash in half from top to bottom.

2Scoop out the insides of the squash (save your seeds and you can toast them).

3Peel the squash and dice it.

4Toss it into a saute pan along with the olive oil and garlic.

5Saute your squash on a medium-high heat for approximately 10 minutes or until it is tender.

6Set aside to cool.

7Dice or chop all of the remaining ingredients and toss into a medium-sized bowl.

8Add the cooled squash.

9Add salt to taste.

10Mix well!
