Almond Coconut Bars

- 2 1/2 c. coconut
- 1 1/2 c. soda cracker crumbs, finely crushed
- 2/3 c. white sugar
- 1 c. flour
- 1 c. softened margarine
- 1 can almond filling (not paste)
- 1 c. sugar
- 2 large eggs
- 1/2 tsp. lemon extract or real lemon
- 1/2 tsp. almond extract
Directions

1Mix until crumbly, using hands, the coconut, crackers, 2/3 cup sugar, flour and margarine.

2Put 1/2 of mixture into a 9 x 13-inch pan.

3Mix the almond filling, 1 cup sugar, eggs and the lemon and almond extract; spoon carefully over the crust.

4Top the filling with the rest of the crumbs and press down gently.

5Bake at 350° for 40 to 45 minutes.
