  • 8 oz. each or 1 1/3 c. dried apricots, pitted prunes and figs
  • 4 c. (about 1 lb.) almonds, coarsely chopped
  • 1 c. flour
  • 1 c. sugar
  • 2 1/4 ??? baking powder
  • 4 eggs
  • 1 tsp. vanilla

Directions

    Preheat oven to 300°.

    Butter and flour a 5 x 9-inch loaf pan. Combine fruit, nuts, flour, baking powder and 3/4 cup sugar; stir to mix evenly.

    Use a mixer to beat eggs and 1/4 cup sugar until tripled in volume.

    Pour into fruit mixture and stir with a spoon to blend.

    Pack evenly into prepared pan and bake 2 hours or until done.

    Cool in pan 15 minutes.

    Invert and cool on rack.
