- 3 medium eggs, lightly beaten
- 180 grams all-purpose flour
- 50 grams whipping cream
- 2 tbsp baking powder
- 90 grams superfine sugar
- 2 tbsp olive oil
- 10 tbsp (75 grams) nesquick
- 1 icing sugar, for dusting
Directions

1Heat the oven to 170a C. Place cupcake cases in a muffin tin.

2Beat the eggs and sugar together in a mixing bowl until light and fluffy.

3Add the flour, oil, whipping cream and nesquick, stirring until fully incorporated.

4Add the baking powder and mix well.

5Spoon the mixture into the cupcake cases.

6Bake for 20 minutes until firm and springy to the touch.

7Remove from the tin and place in a wire rack to cool completely.

8Dash with icing sugar.
