Ingredients

  • 2 3/4 c. sugar
  • 1 c. vegetable oil
  • 1 c. egg substitute
  • 1 lb. pumpkin
  • 3 1/2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. salt substitute
  • 1/2 tsp. ground cloves
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 2/3 c. apple juice

    Mix sugar, oil and egg substitute together.

    Add pumpkin.

    Add dry ingredients, then add apple juice, stirring until just mixed. Pour batter into two greased and floured 9 x 5-inch loaf pans. Bake at 350° for 1 hour or until it tests done.

    The second loaf can be wrapped in foil and kept in freezer for a few weeks.
