- 2 3/4 c. sugar
- 1 c. vegetable oil
- 1 c. egg substitute
- 1 lb. pumpkin
- 3 1/2 c. flour
- 2 tsp. baking soda
- 2 tsp. salt substitute
- 1/2 tsp. ground cloves
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. allspice
- 2/3 c. apple juice
Directions

1Mix sugar, oil and egg substitute together.

2Add pumpkin.

3Add dry ingredients, then add apple juice, stirring until just mixed. Pour batter into two greased and floured 9 x 5-inch loaf pans. Bake at 350° for 1 hour or until it tests done.

4The second loaf can be wrapped in foil and kept in freezer for a few weeks.
