Amish Tapioca Pudding

Ingredients

  • 1 (No. 2) can crushed pineapple, drained (save juice)
  • 6 c. liquid, including syrup drained from fruits and water
  • 1/2 c. baby pearl tapioca (instant)
  • 1 (3 oz.) pkg. orange gelatin
  • 1 c. sugar
  • pinch of salt
  • 1 (8 oz.) container Cool Whip
  • 1 large can mandarin oranges, halved and drained (save juice)

Directions

    Drain fruit and set aside.

    Add water to fruit syrup to make 6 cups.

    Bring to a boil and add tapioca.

    Let stand 15 minutes. Add gelatin, sugar and salt.

    When mixture is cool, stir in pineapple, oranges and Cool Whip.
