- 1 1/2 c. sugar
- 1/4 tsp. cream of tartar
- 4 egg whites
- 3 Tbsp. lemon juice
- 1 Tbsp. grated rinds of lemon
- 1 pt. whipping cream
- 4 egg yolks
Directions

1Beat egg whites stiff.

2Add one cup of sugar gradually and cream of tartar.

3Beat until stiff and shiny.

4Place in a greased pie plate or one large shell sheet.

5Bake at 275° for 1 hour.

6Put egg yolks in a double boiler; heat until thick.

7Add 1 cup sugar, lemon juice and rind; cook stirring until thick, 5 or 8 minutes. Beat cream.

8Mix 1/2 with cooled lemon custard.

9Place in a cool pie shell and top with your topping.
