Ingredients

  • 1 cup granulated sugar
  • 1 cup heavy cream or milk
  • 1/4 cup vegetable oil
  • 3 tsp vanilla extract
  • 2 1/4 cups all-purpose flour, sifted
  • 2 tsp baking soda, sifted
  • 1 None apple, cored, peeled, thinly sliced
  • 3.5 oz raspberries
  • 1 tbsp sliced almonds
  • None None powdered sugar, for dusting

Directions

    Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.

    Combine sugar, cream, oil and vanilla. Fold in sifted flour and baking soda. Distribute between paper liners. Top with sliced apple, raspberries and almonds. Bake for 25-30 mins, until a skewer inserted in the center comes out clean.

    Serve cupcakes dusted with powdered sugar.
