- 20 lb. early fall cooking apples
- 8 c. sweet cider
- 3 large sticks cinnamon
- 4 c. sugar
- 1 tsp. anise seed
Directions

1Pare apples thinly; quarter, core and slice.

2Should be about 11 quarts sliced apples.

3Put in large kettle and add cider.

4Cook until there is sauce.

5(If fine butter is wanted, put through food mill.)

6Turn sauce into a large roasting pan.

7Bake in a preheated 325° oven for 1 hour or until sauce is reduced, about half.

8Stir occasionally.

9Add sugar and stir until it is thoroughly mixed with apples.

10Bake another hour, stirring frequently.

11Add spices, tied loosely in cheesecloth bag and bake 1/2 hour or until mixture is a reddish amber color.

12Stir several times.
-
13Remove bag and pack in hot sterilized jars; seal.
