  • 4 large apples, cored & diced
  • 1 cup coarsely chopped fresh flat-leaf parsley
  • 12 cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • salt & pepper (to taste)
  • 2 tablespoons coarsely chopped of fresh mint

Directions

    mix apples,parsley,olive oil & vinegar.

    season with salt & pepper.

    relish can be refrigerated up to 1 week in a airtight container.

    bring to room temerature and stir in mint just before serving.
