  • 2 1/4 c. cake flour, sifted
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 4 Tbsp. shortening
  • 1/2 c. and 2 Tbsp. sugar
  • 1 beaten egg
  • 1 c. milk
  • 1 c. finely chopped, pared apples

Directions

    Sift flour together with baking powder, add salt, cinnamon and nutmeg.

    Cream shortening and 1/2 cup sugar in bowl.

    Stir in egg. Add flour mixture alternately with milk, mixing well after each addition.

    Fold in apples.

    Fill greased muffin tin 2/3 full. Bake at 425° for 20 to 25 minutes.

    Sprinkle mixture of cinnamon, sugar and nutmeg over muffins before baking.
