- 1-3/4 cup White Sugar
- 2 whole Eggs
- 1 cup Vegetable Oil
- 1 Tablespoon Vanilla
- 3 cups White Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Ground Cinnamon
- 3 cups Cored, Peeled, And Diced Apples
- 1/2 cups Brown Sugar
Directions

1Preheat oven to 350°F and line a muffin pan with paper liners.

2Cream together sugar, eggs, oil, and vanilla until light and fluffy. Sift flour, baking soda, salt, and ground cinnamon into a bowl. Add dry ingredients to the creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.

3Fill paper liners almost to the top, about 3/4 full. Sprinkle with brown sugar.

4Bake at 350°F for 20-24 minutes. Makes 18 muffins.
