- 4 eggs
- 6 Tbsp. flour
- 1 tsp. salt
- 1 Tbsp. granulated sugar
- 2/3 c. milk
- 1 Tbsp. butter
- 1 apple, grated
- 1 Tbsp. lemon juice
- 2 Tbsp. confectioners sugar
- jam or preserves
Directions

1Preheat oven to 425°.

2Beat eggs; add flour, salt and sugar, sifted together.

3Beat 5 minutes or more.

4Add milk; beat 5 minutes longer.

5Melt butter in skillet.

6Pour in butter. Sprinkle batter evenly with grated apples.

7Bake in 425° oven for 8 minutes; reduce heat to 350° and bake 15 to 18 minutes longer, until pancake is puffed and golden.

8Sprinkle with lemon juice and confectioners sugar.

9Cut in wedges and serve with jam or preserves.
