Apple-Pineapple Scallop

- 1 (1 lb. 4 1/2 oz.) can pineapple chunks
- 1/4 c. sugar
- 1 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/4 c. lemon juice
- 3 c. sliced, tart cooking apples
- 4 slices dry bread, broken into coarse crumbs
- 1/4 lb. processed cheese spread, grated
Directions

1Drain pineapple; reserve 3/4 cup liquid.

2Combine dry ingredients in heavy saucepan; add pineapple juice.

3Cook, stirring constantly, until thickened.

4Remove from heat; stir in lemon juice.

5Layer fruit, crumbs and cheese in buttered 2-quart casserole (pour on sauce before adding last layer of crumbs and cheese).

6Cover and bake in 350° oven about 1 hour, or until apple slices are tender.
