Ingredients

  • 1 1/4 c. sugar
  • 2 1/2 c. flour
  • 1 tsp. cinnamon
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 1/2 c. flaked coconut
  • 1/2 c. golden raisins
  • 2 c. shredded carrots
  • 1 shredded apple
  • 8 oz. crushed pineapple
  • 1/2 c. coarsely chopped pecans
  • 3 eggs
  • 1 tsp. oil
  • 1 tsp. vanilla

Directions

    Combine the first 5 ingredients and sift together; set aside. Combine fruit and nuts, also set aside.

    Combine eggs, oil and vanilla in mixing bowl and whip on medium speed for approximately 3 minutes or until well blended and light.

    Add fruit and nut mixture, stir to combine.

    Add dry ingredients and stir just until blended.

    Portion into muffin tins, lined with paper.

    (Fill nearly full so they overflow somewhat to look like a chef's hat.)
