Apple Pork Loin

- 3 Tablespoons Olive Oil
- 2- 1/2 pounds Boneless Pork Loin
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 2 whole Small Onions, Cut Into 1/2 Inch Wide Wedges
- 2 whole Pink Lady Or Honeycrisp Apples, Peeled, Cored And Cut Into 1/2 Inch Cubes
- 2 cloves Garlic, Sliced
- 1- 1/4 cup Apple Cider
- 1/4 cups Chicken Broth
- 2 teaspoons Dried Thyme
- 2 Tablespoons Cider Vinegar
- 4 Tablespoons Cold Butter
Directions

1First preheat the oven to 325 degrees (F) and then heat the olive oil in your Dutch oven over high heat.

2While you are waiting for the oil to heat up, season the pork loin with salt and pepper on both sides.

3When the oil is hot and ready, add the pork loin and brown on both sides (which takes approximately 4 minutes on each side).

4Then remove it from the Dutch oven and place it on a baking sheet or platter.

5Reduce the heat to medium and add the onions, apples and garlic.

6Caramelize them for about 3 minutes until they turn a slight golden brown.

7Then add the apple cider and chicken broth and bring it to a boil.

8The smell of this combination reminds me of my moms homemade stuffing for Thanksgiving!

10Return the pork loin to the Dutch oven and nestle it in with the onions and apples.

11Add the thyme and bring it to a simmer.

12Cover the Dutch oven and transfer it to the oven.

13Cook the pork loin for 40-50 minutes until the pork is cooked all the way through: NO PINK!

14Once the pork is done cooking, remove the Dutch oven from the oven and place the pork loin back onto the platter.

15Turn the heat up to medium-high on your stovetop and bring the apple/onion mixture to a boil to slightly reduce the mixture.

16Add the cider vinegar, salt and pepper and then stir to combine.

17Reduce the heat to medium-low to allow the sauce to simmer, not boil.

18Next, add the butter, 1 tablespoon at a time while stirring until it is completely combined.

19Remove the sauce from the heat.

20Cut the pork loin into thin slices and spoon TONS of sauce on top of it.
