Apple Yam Bake

Ingredients
- 2 lg. yams or sweet potatoes
- 2 lg. Granny Smith apples, peeled and sliced thick
- 1 c. apple juice
- 1 Tbsp. cornstarch
- 1/4 c. packed brown sugar
- 1 Tbsp. lemon juice
- 2 Tbsp. margarine
- 1/2 c. nuts, chopped coarsely
Directions

1Boil potatoes about 15 minutes or until almost tender.

2Peel and slice 1/4 inch thick.

3Use 2 quart casserole.

4Gently toss apples and potatoes together.

5Stir apple juice and cornstarch, add sugar and lemon juice.

6Pour over potatoes and apples and dot with margarine.

7Cover and bake for 20 minutes at 350°.

8Uncover and stir in nuts.

9Cook an additional 10 minutes.
