  • 2 1/2 c. plus 1 Tbsp. flour
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 1 c. oil
  • 2 tsp. soda
  • 1 c. buttermilk
  • 3 eggs
  • 1 jar apricot junior baby food
  • 1 c. chopped nuts (optional)

Directions

    Mix flour, sugar and cinnamon in bowl.

    Add oil and soda mixed with buttermilk.

    Mix well.

    Stir in eggs and baby food.

    Fold in nuts.

    Spoon into 2 prepared loaf pans.

    Bake at 325° for 55 to 60 minutes or until bread tests done.
