- 1 c. snipped dried apricots
- 2 c. warm water
- 1 c. sugar
- 2 Tbsp. butter or margarine, softened
- 1 egg
- 3/4 c. orange juice
- 2 c. flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 3/4 c. chopped nuts
Directions

1Soak the apricots in the warm water for 30 minutes.

2In a mixing bowl, cream the sugar, shortening and egg.

3Stir in orange juice.

4Combine the flour, baking powder, baking soda and the salt and stir into the creamed mixture just until combined.

5Drain the apricots well and add with the nuts to the mixture.

6Pour into a greased 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 55 minutes or until the bread tests done.

8Cool 10 minutes in the pan before removing to a wire rack.

9Yields 1 loaf.
