- 1 c. diced apricots
- 1 1/2 c. boiling water
- 2 1/2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 tsp. vanilla
- 1/2 c. oil
- 1 c. sugar
- 3/4 c. chopped walnuts
Directions

1Cut apricots with scissors into small pieces.

2Pour boiling water on and let set until slightly cool.

3Add remaining ingredients and stir only until moistened.

4The batter should be lumpy.

5Spoon into greased pans.

6Makes 3 small or 1 large loaf. Bake small loaves 35 to 40 minutes at 325°.

7Bake large loaf 45 to 50 minutes at 350°.
