- 1 c. boiling water
- 1 1/2 c. dried apricots
- 1/2 tsp. baking soda
- 1 c. sugar
- 2 eggs
- 2 3/4 c. flour
- 1 Tbsp. baking powder
Directions

1Pour boiling water on apricots; let soak until tender.

2Drain, reserving liquid; add additional water to measure 1 cup.

3Chop apricots.

4Mix liquid with baking soda, sugar and eggs; blend thoroughly.

5Add apricots, flour and baking powder; mix well. Spread batter in 2 buttered and floured 9 x 5 x 3-inch loaf pans. Bake at 350° for 45 minutes or until pick inserted near center comes out clean.

6Remove loaves from pans and cool on wire rack.
