- 1/2 c. apricot preserves
- 2 Tbsp. soy sauce
- 1 Tbsp. lemon juice
- 1 Tbsp. chopped parsley
- 1/8 tsp. oregano
- 1/4 c. minced onion
- 1 broiler-fryer, cut into serving pieces
Directions

1In a mixing bowl, combine preserves, soy sauce, lemon juice, onion, parsley and oregano.

2Add chicken pieces and turn several times, coating them well with sauce.

3Refrigerate overnight, turning pieces several times.

4Remove from sauce and place in a single layer in a baking pan.

5Bake, uncovered, in a 375° oven for 45 to 50 minutes or until chicken is tender and lightly browned. Brush with sauce several times during cooking.

6Brush remaining sauce on chicken just before serving.
