  • 1/2 c. apricot preserves
  • 2 Tbsp. soy sauce
  • 1 Tbsp. lemon juice
  • 1 Tbsp. chopped parsley
  • 1/8 tsp. oregano
  • 1/4 c. minced onion
  • 1 broiler-fryer, cut into serving pieces

Directions

    In a mixing bowl, combine preserves, soy sauce, lemon juice, onion, parsley and oregano.

    Add chicken pieces and turn several times, coating them well with sauce.

    Refrigerate overnight, turning pieces several times.

    Remove from sauce and place in a single layer in a baking pan.

    Bake, uncovered, in a 375° oven for 45 to 50 minutes or until chicken is tender and lightly browned. Brush with sauce several times during cooking.

    Brush remaining sauce on chicken just before serving.
