- 3 whole medium chicken breasts
- 1 (21 oz.) can apricot pie filling
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/2 c. pecan halves
- hot cooked rice
Directions

1Skin chicken breasts and halve lengthwise.

2Arrange in a 13 x 9 x 2-inch baking dish.

3Sprinkle with salt and pepper.

4In a mixing bowl, combine apricot pie filling, lemon juice, salt and nutmeg.

5Stir in pecans.

6Pour apricot mixture over chicken pieces; cover and bake in a 375° oven for 55 to 60 minutes, or until chicken is tender.

7Arrange chicken on rice; spoon apricot mixture on top.
