  • 1 (10 oz.) jar apricot preserves
  • 1/4 c. lemon juice
  • 2 tsp. soy sauce
  • 1/2 tsp. salt
  • 2 to 3 chicken breasts
  • 1 c. dry bread crumbs
  • 1/4 c. butter or margarine, melted

Directions

    Preheat oven to 350°. In shallow dish, combine preserves, lemon juice, soy sauce and salt. Coat chicken with mixture.

    Roll chicken in bread crumbs. Reserve remaining apricot mixture. Arrange chicken in 13 x 9-inch baking dish and drizzle with melted margarine. Bake, uncovered, 45 minutes or until tender. In small saucepan, simmer remaining apricot mixture 5 to 10 minutes. Pour over chicken before serving.
