- 1 c. dried apricots
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. shortening
- 1 c. sugar
- 1 egg, well beaten
- 1/4 c. water
- 1/2 c. orange juice
- 1/2 c. walnuts
Directions

1Soak dried apricots in warm water for 15 minutes.

2Drain water and cut apricots into pieces.

3Set aside.

4Cream in shortening and sugar together.

5Add eggs; blend well.

6Add sifted flour, baking powder, baking soda and salt alternately with water and orange juice.

7Fold in apricots and nuts.

8Pour batter in greased 9 x 5 x 3-inch loaf pan.

9Push batter into corners of pan, leaving center slightly hollow.

10Let stand for 20 minutes before baking.

11Bake at 375° for 60 to 65 minutes.
