- 1 (1 lb.) can (2 c.) apricot halves
- 1/3 c. shortening
- 1/2 c. sugar
- 2 eggs
- 1 3/4 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped walnuts
Directions

1Drain apricots, reserving syrup.

2Sieve apricots; add reserved syrup, if necessary, to make 1 cup.

3Cream together shortening and sugar; add eggs, one at a time.

4Beat until light and fluffy.

5Sift together dry ingredients; add to creamed mixture alternately with apricot mixture.

6Stir in walnuts; turn into well-greased 9 x 5 x 3-inch loaf pan.

7Bake in moderate oven (350°) for about 50 minutes.

8Remove from pan; cool on rack.
