  • 1 (17 oz.) can apricot halves, drained (reserve nectar)
  • 1 c. reserved apricot nectar
  • 1/3 c. sugar
  • 1/4 c. margarine
  • 2 Tbsp. lemon juice
  • 2 Tbsp. grated orange peel
  • 1/4 c. orange juice

Directions

    Puree apricots until smooth.

    Combine apricots and next 5 ingredients in medium saucepan; simmer over low flame until sugar dissolves.

    Cool slightly.

    Stir in orange juice.

    Chill before serving mixture.

    Can be stored up to 2 weeks in refrigerator. Makes 2 cups.
