- 6 chicken breasts, Statler-cut
- 46 ounces pineapple juice
- salt
- pepper
- 2 tablespoons vinegar
- 2 tablespoons brown sugar
- 1 teaspoon basil, chiffonaded
- 1/2 teaspoon nutmeg
- 16 ounces canned peach halves, drained
- 4 tablespoons butter
- 1/4 cup basil leaves
Directions

1Marinate chicken in pineapple juice for 1 day.

2Rinse chicken.

3Put chicken in a greased 3-quart casserole dish.

4Combine orange juice, vinegar, sugar, basil and nutmeg.

5Pour mixture over chicken.

6Top chicken with pieces of butter.

7Cover and bake at 375 degrees for an hour and 15 minutes or until tender, basting often.

8Place peach halves between chicken pieces.

9Baste well and bake for fifteen more minutes.

10Brown under low broiler.

11Garnish with fresh basil leaves.
