- 1/2 lb. grated Monterey Jack cheese
- 1/2 lb. hot sausage
- 1 1/2 c. buttermilk biscuit mix
- 15 medium canned jalapeno peppers, split and deseeded
- 1 box Shake 'n Bake for pork
- 2 eggs, beaten
- 1 pkg. Cheddar cheese
Directions

1Mix together the Monterey Jack and sausage.

2Add biscuit mix. Work together.

3The cheese and sausage will hold dough together. Divide dough into 15 equal parts.

4Stuff peppers with a slice of Cheddar cheese.

5Pat cheese and sausage mixture into small pancake shape.

6Completely cover each pepper with mixture; make sure all edges and ends are sealed.

7Roll back and forth in hands to form egg shape.

8Roll egg in the Shake 'n Bake, then fry until golden brown.

9Can be frozen before frying.
