- 2 (6 oz. each) jars marinated artichoke hearts
- 1 small white onion, finely chopped
- 1 clove garlic, minced
- 4 eggs, beaten
- 1/2 c. fine dry bread crumbs
- 1/2 lb. sharp Cheddar cheese, grated
- 2 Tbsp. minced parsley
- 1 small can sliced mushrooms
- 1/4 tsp. salt, pepper and oregano
- 1/4 tsp. Tabasco sauce
Directions

1Add marinade from one jar of artichokes to frying pan.

2Saute onion, garlic and mushrooms until onion is limp, about 5 minutes. Chop both cans of artichoke hearts and add to onion mixture.
