  • 1 (14 oz.) can artichoke hearts, drained and mashed
  • 1 c. Italian bread crumbs
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 2 Tbsp. Romano or Parmesan cheese
  • 2 eggs
  • 2 cloves garlic, crushed

Directions

    Combine all ingredients.

    Roll into small balls.

    Roll in extra cheese using same kind as in balls.

    Heat in a 350° oven for 10 minutes.

    Don't let them get too dry.

    Can make ahead and freeze.

    Makes 40 to 60 balls.
