Artichoke Chicken

  • 3 to 4 lb. chicken thighs
  • 2 bottles marinated artichokes, drained or 1 can artichokes, drained
  • 1/2 lb. fresh sliced mushrooms
  • 1/2 tsp. paprika
  • 1/4 tsp. rosemary
  • 4 Tbsp. butter
  • 2 to 3 Tbsp. flour
  • 3 Tbsp. sherry
  • 2/3 c. chicken broth
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Sprinkle chicken with salt, pepper and paprika; brown in butter.

    Put chicken in casserole dish.

    Add 1 teaspoon butter to drippings in pan and saute mushrooms.

    Sprinkle flour on mushrooms.

    Stir in broth, rosemary and sherry.

    Cook for a few minutes.

    Arrange drained artichokes between chicken.

    Pour mushroom mixture over all.

    Cover and bake at 350° for 40 minutes. Serves 6 to 8 with rice.
