Artichoke Heart And Spinach Casserole

Ingredients

  • 2 medium onions, chopped
  • 1 Tbsp. butter or margarine
  • 2 (14 oz.) cans artichoke hearts, drained
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
  • 1/2 c. grated sharp Cheddar cheese
  • black pepper to taste
  • 2 Tbsp. lemon juice
  • 1/4 c. grated dry Parmesan cheese

Directions

    While onions saute in butter, line bottom of 1 1/2-quart baking dish with artichoke hearts, quartered.

    Divide ingredients and cover artichokes with two layers of onions, Cheddar cheese, spinach, lemon juice and pepper.

    Sprinkle Parmesan cheese on top. Cover and heat thoroughly in 350° oven about 1/2 hour.
