- pastry for 9-inch pie crust
- 3/4 lb. fresh asparagus or 1 (8 oz.) pkg. frozen cut asparagus
- 3 beaten eggs
- 1 1/2 c. light cream or milk
- 3/4 tsp. salt
- dash of nutmeg
- 1 1/2 c. shredded Swiss cheese
Directions

1On lightly floured surface, roll out pastry to a 12-inch circle.

2Line a 9-inch pie plate or quiche dish with the pastry. Trim to 1/2-inch beyond edge.

3Flute edges, line shell and fill with dry beans.

4Bake at 450° for 5 minutes.

5Remove from oven. Remove foil and beans.

6Reduce oven to 325°.
